With summer in full swing and gardens growing, I couldn’t stop thinking about this crazy green that Jason at Farm To Feast introduced me to.
If you haven’t come across ice plant before, it’s an interesting (and delicious) one for the taste buds.
It stays fresh for longer than a lot of greens. The taste is different too, tangy and slightly salty taste but feels refreshing thanks to all the water it holds.

It’s been grown more widely over the past decades, though it has been used by humans for a long time. Many sources point to what is now South Africa as a possible origin.
If you see some, grab it and give it a shot on its own, work it into a salad, or toss it into your next cook.
